Banana Bread

Note: This was delicious and moist. Next time, though, I will set the rack lower in the oven because the top got a little too done. Ingredients 2 cups flour (all-purpose, whole-wheat, or a mixture of both) 1 teaspoon baking soda 1/2 teaspoon baking powder 1/2 teaspoon salt 1/2 cup vegetable oil (or butter) 1 cup sugar 2 eggs, beaten 3-4 bananas, mashed 1/2 teaspoon vanilla 3 Tablespoons milk Directions Stir together dry ingredients. Beat together remaining ingredients. Add wet ingredients to dry ingredients and blend until just combined. Pour into greased loaf pan and bake at 350 degrees for 1 hour and 15 minutes or until toothpick inserted into the bread comes out clean.
